Fish Recipe

Ingredients:

700 gr cod fillet
olive oil
8 garlic cloves (4 minced and 4 sliced)
2 tbsp tomato paste
2 tomatoes, diced
1 bell pepper, sliced
1 can chickpeas (400 gr), drained and rinsed
380 ml water
handful fresh cilantro
salt and pepper
1 ½ tsp spice mixture (turmeric, fenugreek seed, allspice, ginger)
¾ tsp paprika
½ tsp cumin
juice of ½ lemon
½ lemon, sliced

Instructions:

Heat 2 Tbsp olive oil over medium heat.
Add minced garlic and cook for 1 minute. Add tomato paste, diced tomato, and bell peppers. Cook 4 minutes, stirring.
Add chickpeas, water, cilantro, and sliced garlic. Season with salt, pepper and ½ teaspoon spice mixture. Bring to a boil, cover part-way and let simmer for about 20 minutes.
Combine remaining spice mixture with cumin and paprika. Season the fish with salt, pepper and spices on both sides.
Nestle the fish pieces into the chickpea and tomato mixture. Add lemon juice and lemon slices. Cook 15 minutes until fully cooked.
