Garlic and coriander flatbread
Ingredients:
250g strong white bread flour
1 tsp salt
1 tsp instant yeast
1 tbsp butter, softened
2 tbsps greek yogurt
150ml cool water
2 tbsp butter, melted
2 tsp garlic puree
2 – 3 tsp chopped cilantro
Olive oil for frying
Instructions:
In a large bowl, stir together the flour, salt and yeast.
Add the softened butter, greek yogurt, and most of the water.
Stir until a dough begins to form, add a little more water at a time if needed.
Knead for 10 minutes until the dough is smooth and stretchy.
Place the dough into a large bowl, cover with a towel and leave to rise until at least doubled in size.
Divide the dough into 6 equal pieces.
Roll each piece into a circle about 10-12 sm in diameter and allow to relax for 30-45 mins.
Mix together the melted butter, garlic puree and chopped cilantro.
Fry each flatbread for 3-4 mins on each side on a medium-high heat until they are golden brown
Brush with the garlic butter
