Spinach Orzo Soup


1 big carrot, diced
½ bunch scallions, chopped
2 garlic cloves, minced
2 liters vegetable broth
1 cup orzo pasta
220 gr baby spinach, roughly chopped
½ tsp. salt
¼ tsp. pepper


In a medium pot, saute the carrots and scallions in olive oil for about 5-7 minutes.
Add the garlic, and saute for another minute or two.
Now add the broth and bring the soup to a boil. Simmer for 10 minutes.
At this point, add the orzo pasta and cook for about 5 minutes.
Lastly, season the soup with salt and pepper, add the spinach leaves, and cook for another 2-3 minutes. Serve garnished with lemon wedges or parmesan.
